Roasted Pineapple in Rum Sauce

Like chicken fingers minus the meat, add sugar, booze and butter. OK nothing like chicken fingers

So yeah, pineapple was on sale recently…

Roasted Pineapple with Rum Sauce

  • 1 small pineapple, cut into spears
  • 1/4Β  cup brown sugar
  • 1/4 cup butter
  • 1/4 cup spiced rum
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cornstarch whisked with 1/2 tsp of water

In a two-quart saucepan, whisk butter and brown sugar until butter melts. Remove from heat and stir in rum, spice and cornstarch mix, stirring to incorporate. Place pineapples in a single layer in a 9 by 13 pan. Drizzle rum sauce over the fruit. Bake at 400 for about 25 minutes until pineapple juices bubble and the fruit is nice and golden. Serve alone or over ice cream or pound cake or pancakes.

    Okay, okay, I give. Buying a pineapple tomorrow, even if it isn’t on sale! This one looks like a real guest-pleaser at the end of a meal. (No chicken fingers, though)

    That looks great, Greg. Pineapple and rum are a fabulous combo (perhaps one or two libation recipes may have these ingredients too!!!)
    Would you add a bit of vanilla ice cream or even whipped cream?
