So yeah, pineapple was on sale recently…
Roasted Pineapple with Rum Sauce
- 1 small pineapple, cut into spears
- 1/4Β cup brown sugar
- 1/4 cup butter
- 1/4 cup spiced rum
- 1/2 tsp ground cinnamon
- 1/2 tsp cornstarch whisked with 1/2 tsp of water
In a two-quart saucepan, whisk butter and brown sugar until butter melts. Remove from heat and stir in rum, spice and cornstarch mix, stirring to incorporate. Place pineapples in a single layer in a 9 by 13 pan. Drizzle rum sauce over the fruit. Bake at 400 for about 25 minutes until pineapple juices bubble and the fruit is nice and golden. Serve alone or over ice cream or pound cake or pancakes.

Okay, okay, I give. Buying a pineapple tomorrow, even if it isn’t on sale! This one looks like a real guest-pleaser at the end of a meal. (No chicken fingers, though)
This sounds like a great sauce. I haven’t had fresh pineapple in a long time … I think I’ll pick one up this weekend and see what comes of it all. π
Someone recently gave me a pineapple plant with a tiny little pineapple growing out of it… this looks like a good thing to bookmark for when it’s actually big enough to eat. π

Now, all this needs is a scoop of vanilla bean ice cream with caramel rum sauce. Yum!

I checked out the pineapples at the store yesterday, after your fish recipe…Hard as rocks, every one of them. No scent at all. Sad…too green to ripen well.

I have been wanting to try this every since you posted it. Going to make it Friday as I have a friend coming for a visit. I’ve already got the pineapple & rum (I think)/ so for a change I con’t have to get ingredients!
