Recently pineapple went on sale and actually was fresh and not about to rot before it got back to the house. In celebration, I may have over purchased a little bit. Luckily this dish came out perfect. Make sure to use a stronger flavored fish, like haddock or cod, to offset the sweet pineapple and spicy jalapeno sauce.
Cod with Spicy Pineapple Sauce
- 1/2 pineapple skinned, cored and cut into medium sized chunks
- 2 lbs fresh cod
- 1 red bell pepper seeded and cut into quarters
- 2 cloves garlic
- 2 jalapenos sliced in half and seeded
- 1/2 medium red onion chopped roughly
- 1 lemon
- 1 orange
- Salt/pepper
Season fish with salt, pepper and juice from lemon and orange. Let fish marinate for at least 30 minutes and up to 2 hours. Place pineapple, red pepper, garlic, onion and jalapeno in a baking dish and roast at 375 degrees until pineapple starts to brown, about 45 minutes. Cool then blend into a thick sauce using the pan juices when needed. Place fish in pan and cover with sauce. Bake at 350 degrees until done, about 20-30 minutes. Serve with sauce.

We have been trying to cook more fish lately and I was trying to remember a recipe using pineapple and oranges. Still cannot remember the details but now I do not have to worry. This one will be perfect! Sounds delicious. : )

This sounds good — can’t go wrong with roasted pineapple and red peppers: I wouldn’t have thought to blend them into a sauce.

Pineapple must be in season, Jed just made a ham with a pineapple glaze! Love this iinfirm fish. Somehow I can manage the opaque on fish, but not on a ham! Go figure.

Great sauce, Greg. I’d do it with swordfish or mahi-mahi (the fish so nice, they named it twice!). Maybe with grilled shrimp.
The acid in the pineapple juice will partially ‘cook’ the fish, so less is more with the marinating, especially if you have a thinner fillet.

Wow, look at that color! I was going to say that I should make this for my family, but my mom doesn’t do well with spicy and my sis doesn’t like pineapple. At least my dad and I would go nuts for it!
