Stuffed Leg of Lamb

Toss the mint jelly

Roast lamb creates such a wonderful aroma that it should be turned into a scent for air fresheners.

Butterfly the bone out of the lamb leg and then cut the meat open as evenly as possible to make a somewhat flat layer. Or buy a lamb leg already deboned.

Leg of Lamb Stuffed with Pesto and Spinach

  • 5-7 lb leg of lamb
  • 2-3 tbsp fresh pesto
  • 1 lb spinach
  • 2 slices thick bacon diced fine
  • 1 cup red onion diced fine
  • 1/2 cup dry white wine
  • 3 tbsp grated Romano
  • 2 tbsp chopped fresh rosemary
  • Salt/pepper

Season each side of butterflied lamb with salt, pepper and rosemary. In a frying pan cook bacon until browned and fat is rendered. Add onion and cook until translucent. Add spinach and cook until it wilts. Add wine, deglaze pan and cook until all liquid is gone. Set spinach aside to cool. Spread pesto over the inside of lamb, then with spinach mixture, then top with grated Romano. Roll leg together and tie up tightly. Place in a rack in a roasting pan with some water in the bottom and cook in a 360 degree oven, basting every 30 minutes until done, about 1 1/2-2 hours. Slice and serve.

    I’ve boned out a leg of lamb, spread it with a cup or so of walnut-basil paste, rolled and baked it in the past. The addition of spinach IS a new one on me however, as is the bacon. It all sounds wonderful. I wish lamb wasn’t so pricey though.

  13. We ditched the mint sauce years ago, savory is the way to go with lamb. Your pesto and spinach stuffing is a great idea with slow roasting–YUM!

    Oh my, this looks so juicy and wonderful! I think it’s so funny we were cooking lamb around the same time in such a similar style pesto and all 🙂 ! I love it! I love how you added bacon, in fact bacon and kale would be amazing together! Great minds do think alike 😉 Cheers!

    That spinach-pesto mix would be great in so many ways ~ on pizza, pasta, stuffed into potatoes, tomatoes, or squash. Yum.

    I just recently learned to appreciate lamb. The lamb we have in Canada has a particular odor as it is cooking, something I cannot get used to, but the stuff in Morocco was wonderful!

      You’ve mentioned that before, Eva. I think I know what you mean but wonder whether it’s because our ‘lamb’ is more likely mutton and the smell of mutton fat may be objectionable to you. Do you think the lamb was leaner in Morocco than here? Or whether the combination of spices/sauces they used masked that smell?

      When I boned out my leg of lamb, I tried to remove as much of the extra fat inside the leg as possible as well as the blood vessels I ran across and then squeezed half a lemon over the inside of the meat and rubbed the lemon all over. I really think that that helped as my mother, who like you is not fond of the smell of mutton and usually curls her lip up when I suggest buying it, ate the meat without complaint.
