This is a great weeknight side dish that comes together quickly. Pre-cooked meat can be added to turn it into a main course.
Fried Rice with broccoli and cashews
- half a medium onion, diced
- 1 1/2 cups broccoli, cut small
- 2 large garlic cloves, minced
- 2 large eggs, beaten
- 2 tablespoons soy sauce
- 3 tablespoons sesame oil
- 2 cups cooked rice (1 cup cooked in chicken or vegetable broth)
- 1/4 cup chopped cashews
- salt/pepper to taste
Set a heavy skillet with two tablespoons sesame oil over medium heat. Once oil is hot throw onion and garlic in the skillet; stir-fry until the onion is tender, about one to two minutes. Add the broccoli and soy sauce; stir-fry until for about a minute. It should still be a bit crisp. Remove mixture and place on a plate. Put the remaining oil in the skillet to heat. Once hot, add the rice, breaking up any clumps, until heated through, about two minutes. Add the eggs; stir until scrambled, about a minute. Return the vegetable mixture to the pan and stir to combine. Salt and pepper to taste. Top with cashews. Serve immediately.

Love the chopsticks, too. I have never been able to master using them. I know they don’t have left and right ones but I am left handed and they are just awkward for me. A butter knife drives me wild, too. I seem to hold it upside down. Since this is about the recipe, it looks great and I love easy side dishes.

Ever since I learned to make fried rice, I make a point of ordering extra rice with my Asian take-out, reserving it for a couple days when I use it to make fried rice with the leftovers. Now, though, I’ll get another container of rice so that I can make this dish, too. It sounds great!

Love this type of food! Never thought of combining broccoli with cashews, I usually go for boring almonds instead, but your version made a very nice impact on me… gotta make it soon!

I love your chop sticks…although I never use them. After a trip to Japan, when that was the only instrument available for eating…I decided they are not for me. I ask for a fork and if that is not available, I’ll even settle for a spoon. At least that way, you get to enjoy the meal instead of wearing it.
I like the casual, jaunty, not posed at all look of the chop sticks! The chop sticks are beautiful and noodles would work very well on those curlicues…

that looks like the kind of bowl I’d like to tuck in to. I might have to keep it to myself though as I tried to serve egg fried rice to my husband and children last week and none of them liked it!! Shame on them. I love the addition of the cashews.
