We got this idea from The Silver Spoon and thought it would be a perfect way to use up mashed potatoes. While the recipe calls for a fresh batch, if you’re using leftovers simply add the cheese and egg and, if desired, the bread crumbs. We made our potatoes a little richer (seriously no butter, no milk?) than the original version and omitted a step that called for tying cooked strips of leek around the rolls. Um yep, that didn’t work for me.
Ham and potato rolls
- 1 1/2 pounds potatoes
- 1 1/4 cup Fontina or Asiago cheese
- 2 tbsp bread crumbs
- 2 tbsp butter
- 2 tbsp heavy cream or milk
- 1 egg
- 8 slices, deli ham
- salt and pepper
Peel and cooked the potatoes in boiling, salted water until tender, about 30 minutes. Drain and mash in a large bowl. Add cheese, bread crumbs, butter, milk or cream and egg. Mix to incorporate. Roll out each ham slice and divide potatoes among them. Roll them up and place them seam side down in a greased ovenproof dish large enough to hold all of the rolls. Our lasagna pan did the trick. Bake at 400 for 10 minutes.
Note: If you’re using leftover mashed potatoes, 4-6 cups should do depending on the size of the ham rolls and how fat you like to stuff them.
Another note: Greg and I liked these as is, but thought they looked a bit naked without the leek ties. We’re open to suggestions.
And finally: While this recipe over at Fifteen Spatulas also calls for cooking potatoes from scratch we think it’d work well with mashed potatoes too. She calls them potato macaroons!

This reminds me of the low carb ham & cheese rolls I brought for brown bag lunches as a dieting teen on the Atkins Diet. 😀

Naked is fine by me. I can’t imagine taking the time to do leek ties.
I just couldn’t get them to work and I hate wasting leek or food for that matter.
A chive tie would be easy and work well. Or a long sprig of rosemary.
We grow rosemary, so I love that idea. I wonder if the chives would be easier to tie, probably!
looks yummy. i say swap out the leek ties for more melted cheese!

This is def a new take on mashed potatoes, wish I’d had this one when my kids were running to school.. they could have grabbed one in hand and headed out the door… It’s like a tortilla wrap only better… awesome!!! Good one!

Nice idea for the unpleasantly named “finger food”. I can see that working in a buffet, and maybe the leek tie is a good idea, as is your idea of adding more milk and butter.
I always hated that term too!
Leftover potatoes are seldom an issue at our place, but maybe I’ll just make a bigger batch next time…looks like a great lunch!

I’m with Ruth. I once used chives to tie bundles of asparagus. I won’t be going down that path again anytime soon, be it with chives or leeks. So, it’s naked all the way!
I always tease Greg when he ties something up in the kitchen. I need kitchen sheers to undo it. Maybe I should’ve let him try to do the leek ties.

Now that looks tasty! I bet I could even get the kids to eat mashed potatoes this way. Now if we tied a leek around it – no way. So we’re going sans leek too. 🙂

Lovely – we have something similar in Spain called Flamenquines with cheese and dipped in egg and breadcrumbs. Naked is good – or you could stick something like the leek, red pepper or green beans inside for flavour and colour?!
I love that idea. Although put some green beans on the side and it’s a meal!
I like the idea of more cheese how about a little cheese sauce and some chopped chives for color.Or maybe some rum raisin sauce drizzled over the top ( I know you guys don’t mind adding booze).
Being from New England i use left over mashed potatoes for lots of things including fishcakes that are eaten here for breakfast with baked beans. Or i fill won ton wrappers with cheese and mashed potatoes and fry them in a pan with a little oil till golden brown for an easy take on Pirogi.

Oh! Stuffing goes even faster than mashed potatoes around here. Greg loves to make that open faced sandwich with dressing (which we only eat after the stuffing is gone), mashed potatoes, turkey and gravy. I think the cranberries are in there too.
I would sprinkle them with a little cheese before baking, then maybe serve with some chopped fresh chives. Yum!

So easy, and yet so delicious looking. And when I read “The Silver Spoon” I realised I’ve had that book on my shelf for a few years now and have never used it once… what a shame. I shall get it off the shelf and at least take another close look!
It’s one of our favorite cookbooks. It’s always good for at least ideas and only a few of the recipes we’ve tried haven’t been great.

What a simple yet creative use of ham.
You could always use fun, decorative toothpicks to keep them together. Not as fancy as an edible tie, but functional and easy
Darn, I saw this too late! My mashed potatoes are all gone! I’m just catching up on my blog reading from the last few days…see what happens when I slack off! I love this idea for leftovers. I’m making a note to try this with my next leftover mash…and my son will not care about the leek ties!
Cooking world is so small! This recipe reminds me of the pork and potato rolls in teriyaki sauce I found on Nami’s blog and have made already dozens of times. I suppose the love of potato and pork is very international 😉 Your rolls look gorgeous!

Mm, nice one! If I made these I’d be tempted to serve them with large lettuce leaves – wrap the roll-up in lettuce before eating, kind of like a spring roll. Would provide a lovely bit of crunch I think too!
